When a model that produces Energy Tokens ends its activation next to a monster, and the monster hits it, would the energy remain until the models next activation the following turn?

Monsters always attacks last, so the Energy Token will remain.

If affected by an ability such as Taunt that checks LOS requirements to a model with Ward (e.g. Lugdrug) at the beginning of its activation, would the Ward placement ability be able to activate before those requirements are checked to impact the Taunt?

The Ward placement ability happens at the beginning of the model's activation. If another ability would also trigger at that time, the owner of the model with Ward could choose to resolve the Ward ability before or after the check, which could impact the effect.
